Ingredients

  • 750g beef liver
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh coriander (cilantro) leaves, chopped
  • 6 tbsp lemon juice
  • 1 garlic clove
  • Salt and freshly-ground black pepper, to taste
  • 4 tbsp oil

Directions

1. Wash the liver and pat dry then cut into steaks. Set these in a bowl and sprinkle with 4 tbsp lemon juice then season with salt and black pepper. Cover and set aside to marinate for 30 minutes.

2. In the meantime mix the herbs in a bowl with 2 tbsp oil.

3. Remove the liver from the marinade and dust on both sides with flour. Heat oil in a pan, add the liver and fry for between 2 and 3 minutes per side, or until done to your liking.

4. Place the liver into a serving dish and pour over the oil and herb mixture.
