Ingredients

  • 2 lbs lean beef, finely chopped
  • 1 lb lean ground beef, diced beef or a combination of the two
  • 3 Tbsp olive oil
  • 2 cups yellow onion, finely diced
  • 1 tsp salt
  • 2 Tbsp aji colorado pepper powder
  • 1 tsp cumin
  • 3 Tbsp tomato paste or use fresh tomatoes
  • 3 cups water
  • 1 tsp garlic, minced
  • 1 T parsley, finely chopped
  • 1 t oregano
  • ½ t black pepper, freshly ground
  • ½ c frozen peas
  • 1 cup or more of sarza for garnish

Directions

1. In a bowl, combine aji colorado, cumin and tomato paste with 2 cups water. Set aside.

2. Brown meat and drain off any extra fat.

3. Heat oil in a pot over medium-high heat. Add onion and salt to oil. Sauté the onion until it becomes golden brown and transparent.

4. If using fresh tomatoes, add and saute 5 minutes. Add the garlic, parsley, oregano and black pepper. Continue to sauté for an additional one minute.

5. Add soaked spice mixture to onions. Cook over medium heat until most of the liquid has been absorbed.

6. Add one cup water, meat and peas to sauce.

7. Cook over medium heat for about 15 minutes or until the meat is thoroughly cooked.

8. Serve with rice or boiled potatoes
