Ingredients

  • 1½ cups all purpose flour
  • ½ cup Yellow Corn Meal
  • 2 tbsp sugar
  • 1½ tsp baking powder
  • 1 tsp onion powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • 2 cups cheddar cheese, grated
  • 1 cup of your favorite beer
  • 2 eggs
  • 1/3 cup vegetable oil

Serves 4-6

Directions

1. Sift together the flour, corn meal, sugar, baking powder, onion powder and baking soda.

2. In a medium-sized mixing bowl with electric mixer, beat together the cheese, beer, eggs and oil. Add the dry ingredients and beat for about 2-minutes.

3. Turn into a greased loaf pan and bake at 350°F for about 1-hour or until a knife inserted in the centre comes out clean.

4. Serve warm or cold and refrigerate left-over cornbread.
