Ingredients

  • 7 oz shredded coconut
  • 4 cups flour
  • 2 cups sugar
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 2 tsp vanilla
  • 2 tsp baking powder
  • 1 cup milk
  • ½ cup cream of coconut
  • 4 tbsp sour cream
  • 1 tsp salt
  • 4 eggs, beaten

Directions

1. Mix all ingredients thoroughly – mixture will be thick.

2. Separate into 2 greased loaf pans and bake at 350°f for 1 hour or until done.

3. Excellent served warm as an accompaniment to a cheese board or with soup!
