Ingredients

  • 60g butter, melted
  • 350g sugar
  • 2 tsp freshly-grated nutmeg
  • 450g freshly-grated coconut
  • 2 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 280g maize flour
  • 30g mixed fruit (optional)
  • 150g sweet potatoes, grated
  • Banana leaves, singed over a flame and cut into 20cm squares

Directions

1. Combine all the ingredients in a bowl then place a tablespoon in the centre of each piece of banana leaf.

2. Fold the leaf into a parcel so the filling is in the centre.

3. Place in a steamer basked and steam over plenty of boiling water for about 40 minutes, or until cooked through.
