Ingredients

  • 1 c. chopped onion
  • 2 tsp minced garlic
  • 2 undrained cans black beans (15 oz. size)
  • 1 and 1/2 c. chopped bell pepper
  • 1/2 tsp ground cumin
  • 2 tbsp cider vinegar

Serves 4-6

Directions

1. Sauté onion and garlic in non-stick skillet.

2. Add the undrained beans, bell pepper, and ground cumin.

3. Bring to boil, reduce heat and simmer until pepper is tender.

4. Stir in cider vinegar.

5. Serve over hot rice.
