Ingredients

  • 400g fresh okra
  • 2 eggs, beaten
  • 5 generous slugs of  hot pepper sauce
  • 140g maize (corn) meal
  • 1/2 tsp salt
  • 1/2 tsp freshly-ground black pepper
  • 1/2 tsp cayenne pepper
  • Oil for deep frying

Directions

1. Wash the okra thoroughly then trim the ends.

2. Slice the okra into 12mm tubes and set aside.

3. Beat together the eggs and hot pepper sauce in a bowl, then add the okra and toss to coat.

4. Combine the maize meal, salt, black pepper and cayenne pepper in a shallow dish then dip the okra. Coat evenly.

5. Add oil to a deep fat fryer or a wok and heat to 180°C.

6. Add the okra in small batches and fry until well browned (about 5 minutes).

7. Remove with a slotted spoon and drain on kitchen paper.

8. Serve warm with hot sauce.
