Ingredients

  • 800g langoustine  (dublin bay prawns)
  • 1 lemon
  • Dash of extra-virgin olive oil
  • Large flakes of sea salt, to taste

Directions

1. Halve the langoustines lengthways then arrange, cut side up, on a baking tray.

2. Drizzle lightly with oil then place under a hot grill (broiler) and cook for about 2 minutes, or until the flesh turns opaque and the shells are pink.

3. Serve immediately, garnished with flakes of sea salt and the juice of 1 lemon.
