Ingredients

  • 1 ham (about 2.4kg)
  • For the Glaze
  • 300g guava jelly
  • 80ml unsweetened pineapple juice
  • 2 tbsp brown sugar
  • 1 tbsp prepared mustard
  • 2 tbsp sherry wine

Directions

1. Combine all the glaze ingredients in a saucepan.

2. Bring to a boil then reduce to a simmer and continue cooking, stirring constantly, for a further 10 minutes.

3. Place the ham, fat side uppermost, in a foil-lined roasting tin.

4. Transfer to an oven pre-heated to 170°C and roast for 75 minutes.

5. During this time, baste the ham with the glaze every 10 minutes.

6. When done, transfer to a serving plate, cover loosely and set aside to rest for 10 minutes before serving.
