  • 4 eggs, separated
  • 1 tsp baking powder
  • 400g sugar
  • 250ml orange juice
  • 250g plain flour

Serves 4-6

Directions

1. In a bowl, beat the egg yolks with the sugar until thick and creamy. Add the egg whites to a clean and dry bowl and beat until they stand in soft peaks.

2. Fold the egg whites into the egg yolks mixture. In a separate bowl, mix together the flour and orange juice.

3. Add the baking powder and beat then fold in the egg and sugar mixture. Turn the batter into a greased and floured loaf pan.

4. Transfer to an oven pre-heated to 180°C and bake for about 40 minutes, or until well risen and golden brown on top.

5. Allow to cool in the tin for 10 minutes then turn out onto a wire rack and allow to cool completely before slicing and serving.
