Ingredients

  • 140g plain flour
  • 1/4 tsp salt
  • 1 1/2 tsp baking powder
  • 1 tbsp butter
  • Water to bind
  • 60ml vegetable oil, for frying

Johnny cakes – Anguilla

Serves 4

 

Directions

1. Sift together the flour, salt and baking powder into a bowl.

2. Add the butter and rub into the flour mix with your fingers until the mixture comes to resemble fine breadcrumbs.

3. Now add just enough water to bring the mixture together as a stiff dough.

4. Turn the dough onto a lightly-floured surface and knead until smooth and elastic.

5. Form into a ball, place in a bowl then cover and set aside to rest for 30 minutes.

6. After this time tear off pieces of the dough and shape until flat with your palms.

7. Prick all over with a fork then set on a lightly greased baking tray.

8. Place in an oven pre-heated to 180°C and bake for about 20 minutes, or until lightly golden brown in colour.

9. Finally, heat the oil in a deep-sided frying pan or skillet and use to fry the cakes until they are evenly golden brown all over.

10. Traditionally these are served with chicken, ribs and stews.
