Ingredients

  • 400g sugar
  • 400g plain flour
  • 3 tsp salt
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 80ml vegetable oil
  • 4 eggs, beaten
  • 400g finely-grated carrots

Directions

1. Sift the salt, baking soda and flour together then add the sugar and oil.

2. Mix well then add the beaten eggs and carrots.

3. Mix thoroughly and tip into a well-greased springform cake pan.

4. Place in an oven pre-heated to 170°C and bake for about 30 minutes or until a toothpick placed in the center of the cake comes out clean.
