Ingredients

  • 3kg oxtail
  • 1kg ripe tomatoes, chopped
  • 500g onions, chopped
  • 1 tbsp salt
  • 1 head of garlic, minced
  • Salt and freshly-ground black pepper

Directions

1. Place the oxtail in a large pot then add enough water to cover.

2. Add the onion, tomatoes and garlic then bring to a boil.

3. Reduce to a low simmer, cover and cook for about 90 minutes, or until the oxtail is tender and the sauce has thickened.
