Ingredients

  • 400g unbleached flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 60g shortening
  • 2 eggs beaten
  • 60ml evaporated milk or coconut cream
  • 450g peeled, sliced papaya (pawpaw), then mash
  • 180g sugar

Directions

1. Sift together the flour, baking powder, slat and nutmeg into a bowl and set aside.

2. Meanwhile, in a large mixing bowl beat together the sugar and shortening until light and creamy.

3. Beat the eggs in another bowl.

4. Alternately add the eggs, flour and milk to the creamed sugar beating after each addition.

5. When all the ingredients are fully incorporated stir-in he papaya.

6. Stir the batter thouroughly to mix then pour into a well-greased loaf tin.

7. Bake in an oven pre-heated to 180°C for 1 hour, or until a skewer inserted into the centre of the loaf emerges clean.
