Ingredients

  • 1 ripe papaya
  • 1 scoop vanilla ice cream
  • 1 tbsp coffee liqueur

Serves 4

Directions

1. Peel the papaya and scoop out the seeds.

2. Dice finely then place in a blender.

3. Blitz briefly to break up the pieces of papaya then add the ice cream and blitz a few times, until there are no large chunks of papaya visible.

4. Be sure not to over, blend, or the ice cream will melt and you will end up with a sloppy mess.

5. Spoon into glasses, drizzle with a little of the creme de cassis and serve.
