Ingredients

  • 2 plantains, peeled and sliced about 5mm thick
  • 200g gari (cassava flour)
  • Oil for deep frying
  • Salt, to taste
  • Hot chili powder (optional)

Directions

1. Heat the oil in a deep fryer to 180°C.

2. In the meantime, dip the plantain slices in the gari and press the cassava flour into the fruit to coat.

3. When the oil is hot, drop in the gari-coated plantains a few at a time.

4. Fry until golden brown then remove with a slotted spoon and drain on kitchen paper as you fry the next batch.
