Ingredients

  • 1 large yellow onion
  • 1 pimiento
  • 1 red bell pepper
  • 1 medium head of garlic
  • 1 bunch of cilantro
  • 12 Ajies dulces
  • 6 leaves of Recao (Mexican cilantro)
  • ¼ cup spanish olives
  • 1 tbsp capers
  • 2 tsps salt
  • 1 tbsp black pepper
  • 1 tbsp crushed oregano
  • ½ cup olive oil

Sofrito

Condiment-base to several Caribbean and South American recipes.

 

 

Directions

1. Wash, peel, seed and coarsely chop all the ingredients.

2. Put in a blender and puree.

3. Store in a glass jar covered in the refrigerator for later use.

Tip: You can also freeze the sofrito in ice-cube trays and store the frozen cubes in a freezer bag.
