Ingredients

  • 1.5kg yams
  • 2pcs onions, chopped
  • 1pc small tin of tomato purée
  • 2pcs hot chillies, pounded to a paste
  • Oil for frying
  • Salt and freshly-ground black pepper, to taste

Serves 4-6

 

Directions

1. Wash and peel the yams then cut into 5mm thick slices.

2. Heat a little oil in a wok, add the onions and fry for about 6 minutes, or until lightly browned.

3. Stir in the tomato purée and fry until lightly browned then work in 300ml water and bring to a simmer.

4. Add the yam slices and stir in the pounded chillies then season to taste with salt and black pepper.

5. Reduce to a low simmer, cover and cook for about 30 minutes, or until the yam pieces are fork tender (add more water as needed).

6. Serve hot as an accompaniment.
