Ingredients

  • 1 yam tuber, peeled, washed and cubed
  • 2 tbsp groundnut oil
  • 2 onions, sliced
  • 125ml tomato purée
  • 500ml water
  • Salt and freshly-ground black pepper, to taste

Serves 4-6

Directions

1. Heat the groundnut oil in a saucepan, add the onions and fry for about 5 minutes, or until soft and just beginning to colour.

2. Stir in the tomato purée and fry for 2 minutes, or until beginning to darken then work in the water.

3. Add the yam pieces and season to taste.

4. Bring the mixture to a boil, reduce to a simmer, cover and cook for about 25 minutes, or until the yam pieces are tender and the sauce has thickened sufficiently to coat them.

5. Serve hot on a bed of rice as an accompaniment to fish or meat.
