Ingredients

  • 3 tbsp vegetable oil
  • 2pcs medium onions, chopped
  • 2pcs carrots, chopped
  • 1pc green bell pepper, chopped
  • 750g tinned chopped tomatoes (with liquid)
  • 440g cooked black beans (tinned is fine)
  • 1 tsp salt
  • 2pcs hot chillies (eg scotch bonnet), pounded to a paste (or to taste)
  • 180ml chunky peanut butter

Directions

1. Heat the oil in a large pan over medium-high heat then add the onions and carrots and fry, stirring gently with a wooden spoon, until the vegetables are softened (about 10 minutes).

2. Stir in the green bell pepper and the pounded chillies and continue cooking for 5 minutes more.

3. Stir in the tomatoes, black beans, salt, reduce to a simmer and cook gently for about 15 minutes.

4. Now stir in the peanut butter and continue cooking, covered, for 10 minutes further.

5. Serve hot, on a bed of rice.
