  • 1.5kg cornmeal

Serves 4

Directions

1. Mix the cornmeal with 3l of water and mix thoroughly.

2. Pour through a fine sieve to separate the water from the coarse meal.

3. Discard the cornmeal and retain the water.

4. Put this in a large pot and allow to settle over night.

5. In the morning carefully drain-off the liquid so that you retain the sediment in the bottom of the pot.

6. Retain the soaking water.

7. When ready to prepare place 500ml of the soaking water in a pot, bring to a boil, then and add some 60ml of the sediment.

8. Cook, stirring vigourously for about 8 minutes to cook the meal.

9. If the porridge gets to thick add a little more water as you continue cooking.

10. The final consistency should be porridge-like.
