  • 1 yucca
  • Salt
  • Water (half a pan)

Serves 4

Directions

1. Cut the yucca in 4 or 5 big chunks horizontally.

2.Using a sharp knife, make an incision along each chunk and gently peel off the skin.

3.Cut each chunk of yucca in half vertically and remove its heart (it looks like a small string)

5. Wash and carefully drain the yucca. Cut the halves of the chunks in smaller semicircles.

6. Boil the yucca for a few minutes or until you can prick it easily with a fork.

7. Drain the boiled pieces into a strainer for a few minutes.  Add a little bit of salt. Serve hot as a side dish, to replace rice or mashed potatoes for example.
