Ingredients

  • ~ 2 1/2 cup (300g) cassava flour
  • 3 eggs
  • 1 tsp baking powder
  • 100ml oil
  • 100ml water
  • 300ml honey
  • 250ml brandy

Directions

1. Beat the eggs lightly in a bowl.

2. Add the honey and beat with the eggs until the mixture whitens.

3. Still beating constantly, mix in the water, brandy and oil.

4. In a separate bowl mix the cassava flour and baking powder.

5. Now stir the dry ingredients into the liquid ingredients until you have a muffin batter (do not over mix).

6. Immediately spoon the mixture into the wells of a 12-cup muffin pab lined with paper (fill the wells no more than 3/4 full).

7. Transfer to an oven pre-heated to 180°C and bake for about 20 minutes, or until well-risen and golden brown on top.
