Ingredients

  • 450g mature cheese (Cheddar or Oude Boerenkaas are good)
  • 450g soft white cheese (eg Ricotta, Feta, Keshi di Buriko, Fromage Blanc, Queso Blanco etc)
  • 6 eggs, beaten
  • 5 tbsp cornflour (cornstarch)

Directions

1. Grate the cheeses into a bowl then stir-in the eggs and corflour.

2. Beat until smooth then bring the mixture together and shape into small bowls; these will keep for a long time in the freezer.

3. When ready to cook, drop the balls into hot, deep, fat and fry until golden.
