Ingredients

  • 5 lbs cleaned conch, cooked and diced
  • 3 medium tomatoes, diced
  • 3 medium cucumbers, peeled and diced
  • 2 red onions, finely chopped
  • ¼-cup lime juice
  • Juice of 2 fresh oranges
  • 2 tsp ground pepper
  • 3 tsp salt
  • 1 red pepper (capsicum) diced
  • 1 green pepper (capsicum) diced
  • 2 tsp garlic, chopped

Serves 4-6

Directions

1. Combine all ingredients in a large mixing bowl, preferably while the conch is still warm, and mix well.

2. Refrigerate salad for at least an hour. Serve chilled.
