Ingredients

  • Cooking oil
  • 2 eggs, beaten
  • 3 garlic cloves, minced
  • 2 fresh chilies, chopped or pinch dried chili pepper
  • 3/4 cup cooked crab
  • 3 cups cooked rice
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 2 tbsp soy sauce
  • Salt, pepper
  • 2 stalks scallion, chopped
  • Bunch cilantro, chopped
  • Squeeze of lime juice

Directions

1. Use day-old rice, or cook fresh rice using less water than normal and set it on the counter and let it air out a bit.

2. Heat a wok with cooking oil. Add the minced garlic and fry for a little bit. Don’t let it get burnt. Add the fresh chilies and crab and coat them with oil. Put this all on the side on a small plate.

3. Then add more oil and add the eggs in. Before the egg is all cooked, mix in the rice and stir it around well. Add the crab and garlic mix back in.

4. Mix the soy sauce, fish sauce and sugar together before pouring it over the rice and mix well. Add more sauces, sugar and salt and pepper to taste.

5. Add the scallions in and stir around well.

6. Top with chopped scallions and a squeeze of lime juice. You can also serve fresh cucumbers on the side.
