Ingredients

  • 6 green plantains
  • 100g cooked pork, minced
  • 100g finely-grated cheese
  • 1 garlic clove, minced
  • 2 tbsp butter

Directions

1. Wash the plantains then cut in half. Bring a pan of water to a boil, add the plantains and cook (with their skin) until soft.

2. Peel the plantains then beat with a mallet on a chopping board.

3. Knead to bring the mixture together then mix in the garlic and butter.

4. Continue kneading the mixture until smooth. Divide the plantain mixture into two bowls.

5. Mix the cheese into one and the pork into another. Form into balls. Serve warm, with coffee.
