Ingredients

  • 250ml chicken stock
  • 420ml coconut milk (not sweetened [canned is fine])
  • Salt and black pepper, to taste
  • 1 or 2 tbsp curry powder (or to taste)

Directions

1. Combine all the ingredients in a bowl and mix with a hand blender.

2. Transfer to the refrigerator and chill until needed.

3. Serve as a starter, ladled into chilled soup bowl and accompany with a chilled slice of honeydew melon.
