Ingredients

  • 700g potatoes, peeled and cubed
  • 2pcs onions, peeled and chopped
  • 2pcs leeks, sliced into julienne strips
  • 1pc coconut, flesh grated
  • 1pc knob of butter
  • Salt and freshly-ground black pepper, to taste
  • 2 tbsp coriander leaves, minced

Directions

1. Melt the butter in a pan, add the onion and leeks and fry for about 5 minutes or until soft.

2. Stir in the potato cubes and the grated coconut then add enough water to cover the ingredients.

3. Bring to a simmer and cook gently for 30 minutes.

4. Take off the heat and allow to cool slightly then pour into a blender and process until smooth.

5. Return the soup to the pan and season to taste with salt and black pepper.

6. Allow to heat through, divide between four warmed soup bowls, garnish with the coriander leaves and serve.
