Ingredients

  • 1kg mutton, cut into 3cm pieces
  • 500g white beans
  • 4 onions, chopped
  • 2 large green bell peppers, chopped
  • 5 tomatoes, chopped
  • 2 garlic cloves, chopped
  • 250ml groundnut oil
  • 1 tbsp tomato purée
  • 2 tbsp mayonnaise
  • 2g natron (rock salt)
  • 250ml water

Directions

1. Wash the beans, place in a large bowl, cover with plenty of water and set aside to soak over night.

2. The following day, drain the beans, place in a saucepan, cover with plenty of water then add the natron, bring to a boil and cook for 60 minutes, or until the beans are soft.

3. Drain and set aside until needed. In the meantime, heat the groundnut oil in a large pot.

4. Add the meat pieces and fry until browned.

5. Now add the onions and the bell peppers.

6. Fry for a few minutes, until the onions are soft then add the tomatoes and the garlic.

7. Bring the mixture to a simmer and continue cooking until almost all the liquid has evaporated (about 30 minutes).

8. Stir in the tomato purée then add the water.

9. Bring back to a simmer and cook for about 30 minutes more, or until the meat is tender.

10. Stir in the beans and allow the mixture to cook through for 10 minutes.
