Ingredients

  • 750g goat meat, cut into serving pieces
  • 300g rice, well washed
  • 60ml groundnut oil
  • 1 onion, finely chopped
  • 3 tomatoes, de-seeded and chopped
  • 1 hot chilli, pounded to a paste
  • 1 tsp ground black pepper
  • Salt, to taste
  • 1 Maggi cube (or meat stock cube)

Jollof rice – Niger

Serves 4-6

 

Directions

1. Heat the oil in a large pot, add the onions and fry until soft (about 4 minutes) then add the goat meat and fry until lightly browned.

2. Crush the tomatoes and add these to the pot at this point.

3. Pour in 2l water and bring to a boil then season to taste with salt before adding the chilli and black pepper and crumbling in the Maggi cube.

4. Return to a simmer, cover the pan and cook for about 60 minutes, or until the meat is tender.

5. Remove a ladleful of the broth and set aside.

6. Stir in the rice then increase the heat and cook for about 20 minutes, or until the rice is tender.
