Ingredients

  • 200g peanut butter
  • 200g vegetable suet (shortening)
  • 420g strong bread flour
  • 150g chocolate chips
  • 200g sugar
  • 200g brown sugar
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp salt

Directions

1. Cream together the peanut butter and vegetable suet, until smooth.

2. Sift-in the flour, baking powder, cocoa powder and salt then add the sugars.

3. Mix thoroughly then add the eggs, one by one, beating thoroughly after each addition.

4. Finally, add the vanilla extract.

5. Stir-in the chocolate chips and bring the mixture together as a soft dough.

6. Shape cookies from the dough and place on a well-greased baking tray.

7. Transfer to an oven pre-heated to 180°C and bake for about 12 minutes, or until lightly golden.

8. Allow to cool on the baking tray for 10 minutes then transfer to a wire rack to cool completely.

9. Store in an air-tight tin or jar.
