Ingredients

  • 2 kg sweet  potatoes, peeled and cut into thin slices
  • 1l water
  • 1kg fresh peanuts
  • 250ml water
  • Salt and freshly-ground black pepper, to taste

Directions

1. Combine the sweet potatoes and 1l water into a pan.

2. Bring to a boil and cook for about 20 minutes, or until tender.

3. Drain the potatoes then layer into a casserole dish (season each layer as you add them).

4. Transfer to an oven pre-heated to 50°c to keep warm.

5. Now grind the peanuts in a coffee grinder and mix with the 250 ml water to form a paste.

6. When all the peanuts have been mixed in with the water pour this over the sweet potatoes.

7. Increase the oven temperature to 180°c and bake the mixture for 15 minutes more then serve.

8. This is typically served with various poultry dishes and fried onions.
