Ingredients

  • 1 lb cow’s tail, cut into joints
  • 1 cowfoot (ankle), quartered (or 2 beef marrow bones), washed
  • 1 lb beef, cut into 1-inch cubes
  • 1 lb pork, cut into 1-inch cubes
  • 2 onions, chopped
  • 2 whole congo peppers, tied in a cheesecloth bag
  • ½ cup cassareep
  • Water to cover
  • Salt and pepper to taste

Directions

1. Place the meats in a stew pot, add the onions, peppers, and cassareep, and water to cover.

2. Bring to a boil, reduce heat, and simmer until the meats are tender and nearly falling apart, about 2 hours.
