Ingredients

  • 3 large, very ripe, plantains, peeled and cut into chunks
  • 2 tsp chili paste
  • 1.5 cup (250g) rice flour
  • Salt, to taste
  • 1/4 cup (60ml) corn oil
  • 2 tsp ground turmeric

Directions

1. Peel the plantains and mash to a thick paste.

2. Add the chili paste, mix to combine then add the rice flour and salt.

3. Mix thoroughly with a fork. Gently heat the corn oil in a frying pan and add the turmeric.

4. Stir well, take off the heat, then blend into the plantain mixture (this should be a thick batter that is still soft enough to pour).

5. If the batter is too soft add a little more rice flour and if too stiff add a little water.

6. Grease and flour a loaf pan. Pour the batter in the pan.

7. Transfer to an oven pre-heated to 170°C and bake for about 60 minutes, or until cooked through and firm.

8. Allow to cool in the pan for 10 minutes then turn out onto a wire rack to cool completely.

9. To serve, slice quite thickly and serve with ground, salted, peanuts or use as an accompaniment to a stew or sweet compote.
