Ingredients

  • 1 tbsp oil
  • 1 lb lean ground pork
  • 1/2 cup sliced red onion
  • 1 to 6 small fresh chiles, seeded and minced (optional)
  • 1 tbsp very thinly sliced ginger
  • 1/4 cup fish sauce
  • 1/4 cup lime juice
  • 1/4 cup crushed unsalted dry roasted peanuts
  • 1/4 cup chopped fresh cilantro (optional)
  • 2 tbsp chopped green onion
  • Lettuce leaves

Directions

1. Heat oil in large skillet on on high heat. Add pork; stir fry until lightly browned. Cool slightly. Drain excess liquid.

2. Mix cooked pork, red onion, chiles, ginger, fish sauce and lime juice in large bowl until well blended. Add peanuts, cilantro and green onion. Transfer to serving bowl.

3. Place lettuce leaves on a serving plate. Allow guests to spoon a small portion of pork mixture into each lettuce leaf. Then wrap and enjoy!
