Serves 4-6
1. The day before put the dried fruits to soak over night.
2. Put the fruits in blender to crush.
3. Cream butter and sugar.Do not wait for sugar to dissolve completely ,before adding eggs.
4. Add eggs one at a time, add 1/2 of the flour, b/p then fruit, add remaining flour, bitters,vanilla and colouring.
5. Bake in a slow oven 300 degrees. Grease and line tin before putting batter in.
