Guyana
Serves 2-3
1. Blend 2 2/3 cups milk, 1/3 tsp salt, 1/4 cup sugar and boil, stir constantly.
2. Blend 2 eggs, 1/4 cup sugar, 1/2 tsp essence and touch of rum.
3. Add about 1/2 cup of boiled milk mixture and blend.
4. To remaining boiled milk mixture, add 4 ounces crushed vermicelli and boil until soft using low heat.
5. When the vermicelli mixture is ready, cool a little and add to blended egg mixture.
6. Mix well and pour out into a well greased 9 x 6 pyrex.
7. Add fruits to batter and push them below the surface.
8. Sprinkle cinnamon and nutmeg over top. Let cool a little and bake at 350 degrees for 25 to 30 mins.
