Ingredients

  • 2 tbsp vegetable oil
  • 1/2 cup chopped onion
  • 1 tbsp minced garlic
  • 2 to 3 tbsp fish sauce
  • 1 tbsp roasted red chili paste
  • 1 tsp brown sugar
  • 1 cup snow peas or sugar snap peas, trimmed
  • 1/2 cup thinly sliced red bell pepper
  • 1 lb large shrimp, peeled and deveined

Serves 2-4

Directions

1. Heat oil in large skillet or wok on medium-high heat. Add onion and garlic; stir fry 30 seconds. Add fish sauce, red chili paste and sugar; stir fry 2 to 3 minutes or until onion softens.

2. Stir in snow peas and bell pepper; stir fry 3 minutes or until tender-crisp. Add shrimp; stir fry 2 to 3 minutes or just until shrimp turn pink. Serve immediately.
