Ingredients

  • 2 tbsp dende oil (white palm oil)
  • 1 large onion, finely chopped
  • 3 garlic cloves, crushed
  • 900g fresh medium-sized shelled prawns
  • 1/2 tsp salt
  • 2 tbsp fresh lemon juice
  • 4 large tomatoes, peeled seeded and chopped
  • 2 tbsp flat-leaf parsley
  • 1 tsp black pepper
  • 1 fresh red cayenne pepper
  • 420ml coconut milk

Directions

1. Heat the oil in a pan and stir-fry the onion until soft and golden brown.

2. Add the garlic and prawns and stir-fry for 3 minutes before adding the salt, lemon juice, tomatoes, parsley, cayenne pepper, black pepper and coconut milk.

3. Simmer for about 12 minutes and serve over rice.

4. As a variant you can add cubed firm white fish to the Moqueca (add along with the coconut milk).
