Ingredients

  • 125ml water
  • 1 pinch of salt
  • 8g powdered sugar
  • 50g butter
  • 60g plain flour
  • 2 eggs
  • Oil for deep frying

Directions

1. Combine the water, salt, sugar and butter in a pan.

2. Bring to a boil and immediately it begins to boil dump in all the flour.

3. Stir with a spatula until smooth and cook for 2 minutes, stirring constantly, or until the dough comes away from the sides of the pan.

4. Take off the heat and set aside to cool.

5. When cooled to room temperature, add the eggs, one at a time, beating well to incorporate some air with each egg.

6. The final dough should be fairly stiff.

7. Heat oil in a deep fryer to 150°C.

8. Form the dough into balls and drop these, into the oil.

9. Increase the heat to 180°C and cook the doughnuts until golden brown all over.

10. Drain on kitchen paper and serve warm.
