Ingredients

  • 6 surubi fillets or steaks
  • Juice of 2-3 lemons
  • 1 cup flour
  • Salt and pepper to taste
  • Oil for pan frying
  • 1-2 hot green chilies, seeded (jalapeno or serrano work well
  • 1/2 cup evaporated milk
  • 6 oz queso criollo, broken into chunks
  • 1 cup fresh wacataya or 2 T dried
  • 2 T butter
  • 1/2 a yellow onion, chopped
  • 1 garlic clove, minced

Serves 6

 

Directions

1. Salt and pepper fish on both sides, sprinkle with lemon juice, coat lightly with flour; pan fry in oil until golden and cooked through.

2. Cooking time depends on the thickness of your fillets or steaks.

3. In a blender puree peppers, milk, cheese and wakataya.

4. Saute onion in butter until translucent; add garlic.

5. Add the pureed ingredients and cook for about 5 minutes over medium heat.
