Ingredients

  • 2 cups peeled, grated sweet potato
  • ½ cup sugar
  • ¼ tsp salt
  • 1 tsp vanilla essence
  • 1½ tsp baking powder
  • 1 cup milk
  • 2 ripe bananas, peeled and crushed
  • ½ cup all-purpose flour
  • ¼ cup grated coconut, if desired
  • Oil, for deep fat frying

Serves 4-6

Directions

1. Combine all ingredients until just mixed.

2. Do not use an electric mixer and do not over mix.

3. Drop by teaspoons into hot oil. Cook for 1 to 2 minutes on each side.

4. Drain on paper towels.

5. Fritters can also be cooked on a grill similar to a pancake.

6. Serve hot as a snack or accompaniment to stewed salt fish.
