Ingredients

  • 1 medium pumpkin
  • 2 cups mashed pumpkin
  • ½ cup flour
  • 2 eggs
  • 1 cup brown sugar
  • 1 tsp cinnamon
  • ½ tsp vanilla
  • ½ tsp salt
  • Oil for frying

Serves 2-4

Directions

1. Cook the pumpkin and mash, measure 2 cups to use – or use canned pumpkin.

2. Add the rest of the ingredients.

3. Heat a skillet with 1 1/2 inch of vegetable oil to 350 degrees.

4. Using two spoons scoop some of the mixture into one spoon and use the other to scrape mixture into hot oil.

5. It should quickly form a shell and begins to lightly float.

6. Using a fork quickly flip and press down with the back of the fork to form a patty, flip back.

7. Fry each side until golden orange.

8. The fritters should be firm when pressed with the back of the fork.
