Ingredients

  • 2 lbs potatoes
  • 2 eggs
  • 2 tbsp finely chopped onion
  • 2 tbsp finely chopped green onion
  • 4 tsp cornstarch (Maizena in Brazil)
  • Grated parmesan cheese, to taste
  • Salt, to taste
  • Bread crumbs or farinha de mandioca to coat the bolinhos for frying

Serves 4-6

Directions

1. Boil potatoes with skin in salted water. When done, remove skin.

2. Cut and mash potatoes. Mix with all other ingredients except the bread crumbs.

3. Mix well and chill in refrigerator for 1/2 hour.

4. Then form potato mixture into 1-inch balls.

5. Roll balls in bread crumbs and deep fry until golden.

6. Dry in paper towels and serve very hot.
