Ingredients

  • 4 eggs
  • 1 egg, beaten
  • 1 tin corned beef
  • 65g fresh breadcrumbs
  • Pinch of dried oregano, crumbled
  • 2 tsp tomato ketchup
  • Plain flour, for hands
  • 1 egg, beaten
  • 200g breadcrumbs
  • Vegetable oil for deep frying

Bully beef scotch eggs – Jamaica

 

Serves 4

 

Directions

1. Hard-boil four of the eggs.

2. Allow to cool completely then remove the shells.

3. Mash the corned beef in a bowl, add the breadcrumbs, oregano, ketchup and the beaten egg.

4. Mix thoroughly and set aside.

5. Lightly flour your hands and cover each boiled egg with the corned beef mixture.

6. Dip the coated eggs in the remaining beaten egg then cover with breadcrumbs.

7. Add oil to a large pan, wok or deep fryer.

8. Heat to 180°C then add the coated eggs and deep fry until golden brown.

9. Remove with a slotted spoon then drain on kitchen paper.

10. To serve, slice each Scotch egg in half lengthways.

11. Serve with rice and butter or with fluffy mashed potatoes and hot sauce.
