Ingredients

  • 450g soft goats’ cheese
  • 450g sugar
  • 500ml water
  • 12 egg yolks
  • 4 egg whites

Directions

1. Grate the cheese as finely as possible then boil the sugar in the water until it forms a thick syrup.

2. Add the cheese an mix thoroughly.

3. Now remove the mixture from the heat an combine with the beaten egg yolks and egg whites.

4. Sprinkle the bottom of an oven-proof dish or bowl with burnt sugar.

5. Pour the cheese mixture into this an cook in a bain-marie (double boiler) until the custard thickens.

6. Place in an oven pre-heated to 170°C and cook for 20 minutes, or until the top browns.

7. Allow to cool, cut into cubes or slices and serve topped with granulated sugar.
