  • 150g dry roasted peanuts groundnut

Directions

1. Add the dry roasted peanuts and grind to a powder (stop grinding before the oil is released and the mixture turns into a paste).

2. Wrap the powder in a cloth and sit between two chopping boards.

3. Sit the boards on the floor and stand on them to press out the peanut oil.

4. Turn the peanut powder into a bowl and add just enough hot water to yield a dough. Shape the dough into balls.

5. Heat oil in a deep fryer to 180°C and when it reaches temperature add the peanut powder balls (you should have enough for about 20) then drop in the hot oil and deep fry for a few minutes, or until crisp and brown on the outside.

6. Drain on kitchen paper and store in an air-tight tin or jar.

7. These are ready to eat immediately as a snack.

8. As I tend to use them for other dishes I do not add spices or chillies, but you can mix in any flavouring you wish to the peanut flour before shaping them, if you just want to use as a snack.
