Ingredients

  • 1/2 of a medium-sized ginger root (finely chopped)
  • 1/4 garlic clove, (minced or pureed)
  • 1 teaspoon ground clove
  • 1 teaspoon ground cardamom
  • 1 teaspoon cayenne pepper
  • 1/2 small yellow onion, (finely chopped or pureed in a blender)
  • 1 teaspoon anise seed (optional)
  • 1/4 teaspoon salt
  • 2 ripe (slight yield under pressure, yellow and black) plantains
  • 1/2 cup vegetable oil

The plantains are coated in a mixture of spices and served as a snack/side-of-the-road dish in Ghana, with roasted groundnuts. They are cut either in small cubes or diagonally and are delicious either way.

Directions

1. Combine all spices, pureed garlic, ginger, onions and salt in a bowl.

2. Peel plantains and cut on a diagonal into 1/2 inch pieces or in small cubes.

3. Place in the bowl. Rub spice mixture into plantains.

4. Heat oil in a sauté pan. Fry plantain pieces until they are a golden/dark brown about 10 minutes. Drain on paper towels and serve warm.
