Ingredients

  • 3 cups spinach
  • 3/4 cup whole wheat pasta
  • 1/2 cup canned pumpkin
  • 1/4 tsp cumin
  • 1/8 tsp smoked paprika
  • 1/8 tsp ginger

Directions

1. Add 3 cups of Spinach into a salad bowl and set aside.

2. Bring two cups of water to a boil.

3. Add pasta, cook until soft.

4. While pasta is cooking, mix pumpkin with cumin, smoked paprika, and ginger.

5. Heat pumpkin in the microwave for 30 seconds and scoop over spinach.

6. When pasta is finished, strain and add to pumpkin and spinach.

7. Mix together (the heat from the pumpkin and pasta will wilt the spinach just enough).
